Chill Out Banana Coffee Cream Pie Recipe

Ingredients

Filling:

  • 1 C. sugar
  • 1/4 C. all-purpose flour
  • 2 Tbsp. Clabber Girl® Corn Starch
  • 1/8 tsp. salt
  • 2 C. milk
  • 4 egg yolks
  • 1 tsp. Spice Islands® Pure Vanilla Extract
  • 1 Tbsp. butter
  • 2 C. whipping cream
  • 3 Tbsp. powdered sugar
  • 1 C. vanilla wafer cookies, coarsely chopped

Topping:

  • vanilla pudding, prepared according to package directions
  • 2-3 bananas, sliced in 3/8-inch slices
  • 1 C. whipping cream
  • 2 Tbsp. powdered sugar
  • 1 tsp. coffee extract or 1 1/2 tsp. finely ground instant coffee granules

Directions

  1. Have the 9-inch pie crust baked and cooled.
  2. For the filling, combine the sugar, flour, corn starch and salt in a small bowl and whisk to blend.
  3. In a heavy 3-quart saucepan, over low heat, place 1/2 C. of the milk, the egg yolks and flour mixture. Increase heat to medium and stir, adding in the rest of the milk and vanilla, stirring constantly.
  4. Bring to a gentle boil and, when the mixture begins to thicken, add the butter, continuing to stir. Keep boiling and stirring until mixture reaches a nice pudding consistency. Remove from heat and chill for 30 minutes.
  5. For the whipping cream, whip the cream with the powdered sugar until stiff and chill 20 minutes – you will add this to the filling later.
  6. For the topping, prepare the pudding mix as per package directions and chill for 20 minutes.
  7. Remove all the chilled mixtures from the fridge. To the filling, fold in the whipping cream and the chopped wafers.
  8. To assemble, spoon half of the filling mixture into the pie shell. Top with the bananas. Cover with remaining filling and then mound on the instant pudding. Chill 2-4 hours.
  9. Before serving, whip the whipping cream with the coffee extract.
  10. Before serving, using a pastry bag, decorate pie with the coffee-flavored whipped cream. Dust with instant coffee granules if desired.
