Ingredients

  • 1 (12.3 oz.) package silken tofu
  • 1 C. full-fat coconut milk
  • ½ C. mashed banana (about 1 med.)
  • ½ C. turbinado sugar
  • 4 Tbsp. Clabber Girl® Corn Starch
  • 2 tsp. Spice Islands® Pure Vanilla Extract
  • ½ tsp. kosher salt
  • ¼ tsp. Spice Islands® Ground Saigon Cinnamon
  • 1 vegan pie crust, unbaked
  • 1 banana for serving
  • vegan whipped cream (almond or coconut whipped cream)

Directions

  1. Preheat the oven to 400°F.
  2. In a blender or food processor, blend the tofu, coconut milk, banana, sugar, cornstarch, vanilla, salt, and cinnamon until smooth.
  3. Pour the mixture into the unbaked pie crust.
  4. Bake 45 to 50 minutes, until mostly set; the center will still be a little jiggly.
  5. Transfer to a cooling rack.
  6. When  cooled, move it to the refrigerator and chill for at least 1 hour.
  7. Top with sliced banana and whipped cream for serving.
