Quick Cherry Coffeecake Recipe

Ingredients

  • 1/2 C. softened butter
  • 1 C. granulated sugar
  • 2 eggs
  • 1 tsp. Spice Islands® Pure Vanilla Extract
  • 1/2 C. milk
  • 2 C. all-purpose flour
  • 2 tsp. Clabber Girl® Baking Powder
  • 1/4 tsp. salt
  • 19 oz cherry pie filling

Directions

  1. Preheat oven to 350° F.
  2. Spray a 9 x 13-inch cake pan with cooking spray like Baker’s Joy®.
  3. In a large bowl, cream the butter and sugar. Add eggs, vanilla and milk to make a smooth batter. In a separate bowl, combine flour, baking powder, and salt. Stir into batter and beat for 1 minute. Spread half of the batter into the pan; spoon cherry pie filling over. Dollop the rest of the batter onto the cherry pie filling.
  4. Bake for about 50 to 60 minutes or until cake top is gently browned.
  5. Cool well before serving.
