Prized Peanut Butter Crunch Cookies

Ingredients

  • 1 C. Crisco® Butter Flavor All-Vegetable Shortening
  • 2 C. firmly packed brown sugar
  • 1 C. crunchy peanut butter
  • 4 large egg whites
  • 1 tsp. Spice Islands® Pure Vanilla Extract
  • 2 C. all-purpose flour
  • 1 tsp. Clabber Girl® Baking Soda
  • 1/2 tsp. Clabber Girl® Baking Powder
  • 2 C. crisp rice cereal
  • 1 1/2 C. chopped peanuts
  • 1 C. McCann’s® Quick Cooking Rolled Irish Oats
  • 1 C. flake coconut

Directions

  1. HEAT oven to 350ºF.
  2. BEAT shortening, brown sugar and peanut butter in bowl of electric mixer at medium speed until blended. Beat in egg whites and vanilla.
  3. COMBINE flour, baking soda and baking powder in a medium bowl. Beat into shortening mixture at low speed until just blended. Using a spoon, stir in cereal, peanuts, oats and coconut until evenly combined.
  4. DROP by rounded measuring tablespoonfuls of dough 2 inches apart onto ungreased baking sheet.
  5. BAKE 8 to 10 minutes or until set. Cool on baking sheets 2 minutes. Place on cooling racks to cool completely.
