Nantucket Cranberry Pie

Ingredients

  • 2 C. cranberries (fresh or frozen)
  • ½ C. sliced almonds
  • ½ C. granulated sugar
  • 1 C. all-purpose flour
  • 1 C. granulated sugar
  • 6 Tbsp. butter, melted
  • 2 Tbsp. half and half
  • 2 eggs
  • 1 tsp. Spice Islands® Pure Almond Extract
  • ½ tsp. Spice Islands® Pure Vanilla Extract
  • ¼ tsp. salt

Directions

  1. Preheat oven to 350°F. Spray a 9-inch round cake pan generously with Baker’s Joy® No Stick Spray with Flour; set aside.
  2. In a small bowl, mix the cranberries, almonds and ½ C. sugar and stir well. Pour into the prepared pan and spread out evenly.
  3. In a medium bowl, combine the flour, 1 C. sugar, melted butter, half and half, eggs, extracts, and salt.
  4. Mix until well blended.
  5. Pour all over the cranberry mixture trying to cover as much as possible.
  6. Use an offset spatula to finish spreading out batter.
  7. Bake for 40-50 minutes or until a toothpick inserted in the center comes out with just some moist crumbs.
  8. Serve with ice cream or whipped cream.
