Mardi Gras Cake 2

An easy to make dessert for Mardi Gras with the flavors of a King Cake!

Ingredients

Cake

  • 1 lb. butter, softened
  • 1 lb. powdered sugar, sifted
  • 4 whole eggs
  • 4 egg whites (reserve the yolks)
  • 2 1/2 tsp. Spice Islands® Pure Vanilla Extract
  • 2 3/4 C. all purpose flour
  • 1 Tbsp. dry milk powder (optional)
  • 1 tsp. Clabber Girl® Baking Powder

Filling

  • 8 oz. cream cheese, softened
  • 1/4 C. granulated sugar
  • 2 Tbsp. Spice Islands® Ground Saigon Cinnamon
  • 4 reserved egg yolks
  • 1 1/2 tsp. lemon juice

Glaze

  • 2 C. powdered sugar, sifted
  • 3-5 Tbsp. milk
  • 1/2 tsp. Spice Islands® Pure Vanilla Extract
  • purple, green, and yellow sanding sugar

 

Directions

  1. Preheat oven to 350°F
  2. Generously spray a Bundt pan with Baker’s Joy® No-Stick Cooking Spray; set aside.
  3. In the bowl of a mixer, cream together the butter and powdered sugar until smooth and creamy; scrape the sides of the bowl as needed.
  4. Add the eggs and egg whites, one at time, scraping the bowl periodically. The eggs will not fully incorporate into the butter mixture. Add in the vanilla.
  5. Scrape the sides and bottom of the bowl very well.
  6. In a small bowl, whisk together the flour, milk powder, and baking powder, then on low speed, add the flour mixture to the batter and mix until fully incorporated.
  7. In a separate mixing bowl, cream all the ingredients for the filling until smooth.
  8. Pour half of the cake batter into the prepared pan and spread out evenly.
  9. Pour the filling mixture over the cake batter.
  10. Add the remaining cake batter and spread it over the filling mixture.
  11. Bake for 1 hour or until a toothpick inserted in the center comes out clean.
  12. Remove from oven and allow to cool for 15 minutes before turning out onto a platter.
  13. Allow the cake to cool completely.
  14. To make the glaze, whisk together the powdered sugar, 3 Tbsp. milk, and vanilla. Add more milk if needed to reach the desired consistency. Pour over cooled cake and sprinkle with sanding sugar.
