Coconut Pecan Filling and Frosting Recipe

Ingredients

  • 1 – 12 oz. can evaporated milk
  • 1 1/2 C. sugar
  • 5 egg yolks, slightly beaten
  • 3/4 C. butter, cut into pieces
  • 2 tsp. Spice Islands® Pure Vanilla Extract
  • 2 2/3  C. pecans, chopped
  • 2 C. flaked coconut

Directions

  1. In a large saucepan combine evaporated milk, sugar, egg yolks, butter and vanilla.
  2. Cook and stir over medium heat until butter melts and mixture begins to bubble.
  3. Stir constantly, keeping mixture at a rolling boil until it thickens, about 12 minutes (turn heat down if needed to keep from boiling over).
  4. Remove from heat; add chopped pecans and coconut. Cool until frosting is of spreading consistency, beating occasionally.
  5. Store in the refrigerator.
  6. Extra frosting can be frozen in a sealed container for up to 6 months. To thaw, place container in refrigerator.
