Ingredients

  • 1 C. unsalted butter, softened
  • 1/2 C. granulated sugar
  • 2 egg yolks
  • 3/4 tsp. Spice Islands® Pure Vanilla Extract
  • 2 C. all-purpose flour
  • 1/4 tsp. salt
  • 1/2 . pecans, chopped, for rolling (optional)
  • 3/4 C. Cinnamon Toast Crunch™ Cinnamon Spread

 

Directions

  1. Preheat oven to 350°F.
  2. Cream together butter and sugar in a bowl.
  3. Add egg yolks and vanilla and beat well.
  4. In a separate bowl, whisk together the flour and salt.
  5. With mixer on low speed, gradually add the dry mixture to the butter mixture until completely combined, Dough will be crumbly.
  6. Shape dough into balls and roll in pecans (if using). Place on cookie sheets about 2 inches apart.
  7. With thumb, dent each cookie in the center and place in oven.
  8. Bake for 10-12 minutes or until cookies begin to brown.
  9. Remove from oven and let cool.
  10. Spoon cinnamon spread into the thumbprint of each cookie.
