Cherries-and-Cream-Quick-Bread-LR

Ingredients

  • 1 tsp. Spice Islands® Pure Almond Extract
  • 1/4 C. chocolate chips, melted (to swirl on top of glaze)
  • 1/2 tsp. maraschino cherry liquid
  • 1 tsp. Spice Islands® Pure Almond Extract
  • 2 Tbsp. powdered sugar
  • 1/4 C. slivered almonds
  • 1/2 C. mini chocolate chips
  • 1 C. dried sour/tart cherries
  • 2 C. all-purpose flour
  • 1 C. sour cream
  • 2 Tbsp. light olive oil
  • 1 egg
  • 8 oz package cream cheese, softened
  • 1/2 tsp. salt
  • 2 tsp. Clabber Girl® Baking Powder
  • 1 C. granulated sugar

Directions

  1. Preheat oven to 350 F.
  2. Mix flour, sugar, baking powder and salt; set aside.
  3. In a separate bowl, combine cream cheese, egg, oil, sour cream and pure almond extract. Blend together lightly with whisk.
  4. Add cream cheese mixture to dry ingredients and mix just until combined. Fold in dried cherries, chocolate chips and almonds.
  5. Pour into greased loaf pan (9 x 5 x 3-inches), and bake at 350° F for 55-60 minutes or until toothpick inserted in center comes out clean.
  6. Cool for 10 minutes before turning loaf out onto rack.
  7. While bread is cooling make glaze by combining powdered sugar, almond extract and maraschino cherry liquid (add teaspoon or more of water if needed for consistency).
  8. Top bread with almond glaze, swirl on melted chocolate and decorate with maraschino cherries.
