Banana Blueberry Loaf Recipe

Ingredients

  • 1 C. sugar
  • 1/2 C. Crisco® Pure Vegetable Oil
  • 1 C. ripe, mashed bananas
  • 1/2 C. low fat plain yogurt
  • 1 tsp. Spice Islands® Pure Vanilla Extract
  • 2 lg. eggs
  • 2 C. all-purpose flour
  • 1 tsp. Clabber Girl® Baking Soda
  • 1/2 tsp. Clabber Girl® Baking Powder
  • 1 C. fresh or frozen (do not thaw) blueberries

Directions

  1. Preheat oven to 350° F. Grease and flour a large loaf pan (9×5-inch).
  2. In a large bowl, combine sugar and oil; beat well. Add bananas, yogurt, vanilla, and eggs; blend well. Add flour, baking soda, baking powder and salt; stir until ingredients are just moistened. Gently stir in blueberries. Pour into greased and floured loaf pan.
  3. Bake in preheated oven for 40-50 minutes or until toothpick inserted in center comes out clean. Cool for 5 minutes then flip onto cooling rack.
