Almond Sugar Cookies Recipe

Ingredients

For the Almond Sugar Cookies:

  • 1 C. butter (no substitutes)
  • 1-1/2 C. powdered sugar
  • 1 egg
  • 1 tsp. Spice Islands® Pure Vanilla Extract
  • 1/2 tsp. Spice Islands® Pure Almond Extract
  • 2-1/2 C. all-purpose flour
  • 1 tsp. Clabber Girl® Baking Soda
  • 1 tsp. Spice Islands® Cream of Tartar

For the Creamy Almond Icing:

  • 1/2 C. Crisco® All-Vegetable Shortening
  • 1 to 2 Tbsp. water
  • 1 tsp. Spice Islands® Pure Almond Extract
  • 2 C. powdered sugar
  • 1-1/2 tsp. meringue powder
  • Optional, Food Color Kit

Directions

  1. Preheat oven to 350°F.
  2. Beat butter and powdered sugar in large bowl with electric mixer until creamy.
  3. Add egg, vanilla and a half tsp. almond extract and beat well.
  4. Thoroughly blend flour, baking soda and cream of tartar; gradually add to butter mixture until well combined.
  5. Roll cookie dough into 1-inch balls and place on ungreased baking sheets.
  6. Gently press down with a glass that has been dipped in sugar.
  7. Bake for 9 to 11 minutes, until just browning around the edges.
  8. Cool on wire racks.
  9. To make Creamy Almond Icing, beat shortening, 1 Tbsp. water and almond extract with electric mixer until creamy.
  10. Add powdered sugar and meringue powder.
  11. Beat until creamy.
  12. If frosting is too thick, add water by the teaspoonful until desired consistency.
  13. Tint icing if desired.
  14. Frost cookies, sprinkling with colored sugars or decorations if desired.
