Pumpkin Spice Bread

Ingredients

  • 3 1/2 C. all-purpose flour
  • 1 tsp. Clabber Girl® Baking Powder
  • 2 tsps. Clabber Girl® Baking Soda
  • 1 Tbsp. Spice Islands® Pumpkin Pie Spice
  • 1/2 tsp. salt
  • 1 (15 oz.) can solid pack pumpkin
  • 1 C. Crisco® Pure Vegetable Oil
  • 2 C. sugar
  • 3 large eggs
  • 1 C. chopped walnuts
  • 1 C. raisins

ORANGE GLAZE (Optional)

  • 1 1/2 C. powdered sugar
  • 1 tsp. grated orange peel
  • 1 Tbsp. orange juice
  • Additional chopped walnuts

Directions

  1. HEAT oven to 350°F. Spray two 9 x 5-inch loaf pans with no-stick cooking spray like Baker’s Joy®.
  2. COMBINE flour, baking powder, baking soda, pumpkin pie spice and salt. Mix pumpkin, oil, sugar and eggs in bowl of electric mixer until well blended. Add dry ingredients; mix well. Stir in walnuts and raisins. Divide batter between prepared loaf pans.
  3. BAKE 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool on wire rack 15 minutes. Remove from pans; cool completely.
  4. BLEND together powdered sugar, orange peel and orange juice. Spoon over top of cooled bread. Sprinkle with additional nuts

For muffins:

  1. Coat 24 muffin C. with no-stick cooking spray like Baker’s Joy®.
  2. Divide batter evenly in cups. Bake at 350°F 20 to 25 minutes or until toothpick inserted in center comes out clean.
