Pumpkin Brown Sugar Waffles

Ingredients

  • 1 C. buttermilk
  • 1 tsp. Clabber Girl® Baking Soda
  • 1 3/4 C. all-purpose flour
  • 1/3 C. packed light brown sugar
  • 2 tsps. Spice Islands® Pumpkin Pie Spice
  • 1 1/2 tsps. Clabber Girl® Baking Powder
  • 1/4 tsp. salt
  • 2 egg yolks
  • 1/2 C. canned pure pumpkin
  • 3 Tbsps. Crisco® Butter Flavor Crisco® All-Vegetable Shortening
  • 3 egg whites
  • Maple Grove Farms® Pure Maple Syrup

Directions

  1. WHISK buttermilk and baking soda in medium bowl to mix well. Set aside. Stir together flour, brown sugar, pumpkin pie spice, baking powder and salt in medium bowl until blended.
  2. BEAT 2 egg yolks, buttermilk mixture, pumpkin and melted shortening in large bowl until blended. Gradually stir in flour mixture, stirring just until blended.
  3. BEAT 3 egg whites in medium bowl with electric mixer on high speed until soft peaks form. Fold into waffle batter.
  4. COAT waffle iron with no-stick cooking spray like Baker’s Joy® and heat to medium temperature.
  5. Pour 1/2 C. batter onto waffle iron. Cook 3 to 4 minutes according to manufacturer’s directions or until golden brown. Remove from waffle iron. Repeat to cook remaining waffles. Serve with syrup.
