Pumpkin Bread Pudding with Spiced Vanilla Sauce

Ingredients

Bread Pudding

  • 1/2 C. chopped pecans
  • 8 C. stale bread, coarsely cubed
  • 1 C. milk
  • 1 tsp. Spice Islands® Orange Peel
  • 2 C. heavy cream
  • 2 tsp. Spice Islands® Pure Vanilla Extract
  • 4 eggs
  • 1 C. sugar
  • 1/2 C. dried cranberries OR other dried fruit (chopped dates, dried apricots, golden raisins, etc)
  • 1/2 C. milk
  • 1-1/2 Tbsp. Spice Islands® Pumpkin Pie Spice
  • 1/4 C. butter OR margarine, melted
  • 1 can (15 ounces) pumpkin

Spiced Vanilla Sauce

  • 1/2 C. butter
  • 1 Tbsp. Clabber Girl® corn starch
  • 1/4 tsp. Spice Islands® Pumpkin Pie Spice
  • 1/2 tsp. Spice Islands® Pure Vanilla Extract

Directions

  1. Spray 13 x 9-inch baking dish with cooking spray like Baker’s Joy®.
  2. Place bread in baking dish.
  3. Sprinkle cranberries and pecans over the top.
  4. Whisk pumpkin, butter, cream, milk, eggs, sugar, pumpkin pie spice, orange peel and vanilla in a large bowl.
  5. Pour over bread; let stand 15 minutes.(At this point, mixture can be covered and refrigerated up to 24 hours, if desired).
  6. Preheat oven to 350F.
  7. Bake pudding for 50 to 60 minutes, or until center is set.
  8. Mix sugar and corn starch in a medium saucepan.
  9. Add milk and butter.
  10. Bring to a boil, stirring constantly over medium high heat.
  11. Boil for 1 minute.
  12. Remove from heat; stir in pumpkin pie spice and vanilla.
  13. To serve, spoon sauce over each serving of bread pudding.
