Peanut Butter Oatmeal Mug Cake

Ingredients

  • 1 1/2 tsp. Crisco® Pure Vegetable Oil (or Crisco® Pure Canola Oil)
  • 1/2 tsp. Spice Islands® Pure Vanilla Extract
  • 1 egg, lightly beaten
  • 1 Tbsp. peanut butter
  • 1 Tbsp. Grandma’s® Molasses Original
  • 2 Tbsp. almond flour
  • 2 Tbsp. McCann’s® Quick Cooking Rolled Oats, + 1 tsp. for garnish
  • 1/2 tsp. Clabber Girl® Baking Powder
  • 1/4 tsp. salt

Directions

  1. In a 12 oz. or larger microwavable coffee mug, mix together the oil, vanilla, egg, peanut butter, and molasses until well blended.
  2. Stir in the flour, oats, baking powder, and salt. Mix until thoroughly combined. Sprinkle the top with 1 tsp. oats.
  3. Microwave on full power for 1 1/2 – 2 minutes.
  4. Carefully remove from microwave and allow to cool for 1 minute.
