Oatmeal Cake Recipe

Ingredients

  • 1 1/2 C. boiling water
  • 1 C. McCann’s® Quick Cooking Rolled Irish Oats
  • 1/2 C. butter
  • 1 C. brown sugar
  • 1 C. granulated sugar
  • 2 eggs (beaten)
  • 1 1/2 C. all-purpose flour
  • 1 tsp. salt
  • 2 tsp. Clabber Girl® Baking Powder
  • 1 tsp. Spice Islands® Ground Saigon Cinnamon

Topping:

  • 4 Tbsp. butter
  • 1/2 C. brown sugar
  • 1/4 C. 2% milk
  • 1 tsp. Spice Islands® Pure Vanilla Extract
  • 1 C. chopped walnuts

Directions

  1. Pour boiling water over oatmeal and stir. Let stand for about 10 minutes.
  2. Next, add butter and mix until melted.
  3. Add the remaining ingredients for the cake and stir until well blended.
  4. Pour into a well greased 9″ x 9″ baking dish.
  5. Bake in a preheated oven at 350°F for about 40 minutes.
  6. Meanwhile, place all the topping ingredients in a small saucepan and cook for 3-4 minutes.
  7. When cake is baked, remove from oven and pour topping over hot cake.
  8. Allow to cool before serving.
