Mint Chocolate Chip-6

Ingredients

  • 3 ¾ C. all-purpose flour
  • 1 ½ tsp. Clabber Girl® Baking Powder
  • 1 tsp. salt
  • ¾ C. butter, softened
  • 2 ¾ C. granulated sugar
  • 2 eggs
  • 2 drops green food coloring
  • 1 tsp. Spice Islands® Pure Vanilla Extract
  • 2 ¼ tsp. peppermint extract
  • 1 C. semi-sweet chocolate chips

Directions

  1. Preheat oven to 350°F
  2. In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
  3. In a stand mixer or with an electric hand mixer, cream the butter, and granulated sugar until smooth and creamy, about 2-3 minutes on high speed; scrape the sides of the bowl as needed.
  4. On medium speed, add the eggs, food coloring, vanilla, and peppermint extract and mix until blended; scrape the sides of the bowl as needed.
  5. On low speed, add the flour mixture and blend just until combined.
  6. Stir in the chocolate chips.
  7. Scoop dough into 2” dough balls on a parchment lined baking sheet and flatten each cookie slightly with the palm of your hand.
  8. Bake for 12-15 minute or until the edges start to brown.
  9. Allow to cool on a wire rack.
