Lemon Berry Mug Cake R2

Ingredients

  • 1 Tbsp. salted butter
  • 1 oz. cream cheese
  • 1/2 tsp. Spice Islands® Pure Almond Extract
  • zest of half a lemon
  • 1 egg, lightly beaten
  • 2 Tbsp. paleo or gluten free flour blend (all-purpose flour can be used)
  • 1 Tbsp. granulated sweetener (such as monk fruit) (granulated sugar can be used)
  • 1/2 tsp. Clabber Girl® Baking Powder
  • 8-10 blackberries and/or raspberries, fresh or frozen + more for garnish if desired

Directions

  1. Place butter and cream cheese in a 12 oz. or larger microwavable coffee mug. Microwave on full power for 15-20 seconds.
  2. Remove from microwave and add the almond extract, lemon zest, and egg and mix until well blended.
  3. Add the flour, sweetener, and baking powder and stir until completely blended.
  4. Press the berries just below the surface of the batter.
  5. Microwave on full power for 1 1/2 – 2 minutes.
  6. Carefully remove from microwave and allow to cool for 1 minute.
  7. Garnish with more berries if desired.
