Ingredients

  • 1 ¼ C. softened butter
  • ½ C. firmly packed brown sugar
  • ½ C. granulated sugar
  • 1 egg, slightly beaten
  • 1 tsp. Clabber Girl® Baking Soda
  • 1 tsp. Spice Islands® Pure Vanilla Extract
  • 1 ½ C. all-purpose flour
  • 1 tsp. salt
  • 1 tsp. Spice Islands® Ground Saigon Cinnamon (optional)
  • 3 C. McCann’s® Quick Cooking Rolled Irish Oats
  • ¾ C. raisins
  • ½ C. chopped walnuts

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, cream the butter and sugars. Add egg and vanilla extract.
  3. Combine flour, baking soda, salt and cinnamon. Add to butter mixture. Mix well.
  4. Stir in oats, raisins and walnuts.
  5. Drop rounded teaspoons of batter on an ungreased cookie sheet.
  6. Bake for 12-15 minutes at 350°F.
  7. Cool for 1 minute before removing to wire cooling rack.
