Ingredients
For the whoopie cakes:
- 1 1/4 C. rice flour
- 2/3 C. cocoa powder
- 2/3 C. tapioca starch
- 1 Tbsp. xanthan gum*
- 1 tsp. Clabber Girl® Baking Soda
- 1/4 tsp. salt
- 1/2 C. unsalted butter, softened
- 1 1/4 C. brown sugar, packed
- 2 eggs
- 4 tsp. Spice Islands® Pure Vanilla Extract
- 1 C. plus 2 Tbsp. buttermilk
*If gluten is not an issue, simply use a total of 2 C. all-purpose flour in place of the rice flour and tapioca starch. Omit the xanthan gum.
For the filling:
- 8 Tbsp. butter
- 3 C. powdered sugar, sifted
- 2 tsp. Spice Islands® Pure Vanilla Extract
- 2-3 Tbsp. milk
