Creamsicle Cookies

Ingredients

  • 1 –  0.16 oz. pkg. orange flavored drink mix (unsweetened)
  • ½ C. sugar
  • 1 ¾ C. all-purpose flour
  • ½ tsp. Clabber Girl® Baking Soda
  • 1 tsp. Clabber Girl® Baking Powder
  • ½ C. softened butter or margarine
  • 1 tsp. Spice Islands® Pure Vanilla Extract
  • 1 egg, beaten
  • 1 ½ C. white chocolate baking chips, chopped

Directions

  1. Preheat oven to 350° F.
  2. Combine drink mix, sugar, flour, soda and baking powder.
  3. In a separate bowl, cream the butter, vanilla and egg. Stir dry mixture in with creamed mixture until thoroughly combined; add white chocolate chips. (Dough may appear to be a little dry.)
  4. Roll dough into a log approximately 8-10” long and wrap in plastic wrap. Chill for 1 hour or overnight.
  5. Slice into ¼” thick pieces. Place on lightly greased baking sheet about 2 inches apart.
  6. Bake at 350° F for 12 to 14 minutes.
  7. Cool on wire racks.
