Clabber Girl Banana Bread Recipe

Ingredients

  • 1 3/4 C. all-purpose flour
  • 1/2 C. sugar
  • 2 tsp. Clabber Girl® Baking Powder
  • 1/2 tsp. Clabber Girl® Baking Soda
  • 1/4 tsp. salt
  • 1 C. mashed ripe banana (2 to 3 bananas)
  • 1/2 C. Crisco® All-Vegetable Shortening, margarine, or butter
  • 2 Tbsp. milk
  • 2 eggs
  • 1/4 C. chopped nuts

Directions

  1. Preheat oven to 350°F. Grease an 8 x 4-inch loaf pan. Set aside. In a large bowl, combine 1 C. of the flour, the sugar, baking powder, baking soda, and salt. Add mashed banana, shortening, and milk. Beat with an electric mixer on low speed until blended. Beat on high speed for 2 minutes. Add eggs and remaining flour; beat until blended. Stir in nuts.
  2. Pour batter into the prepared pan. Bake for 55 to 60 minutes or until a toothpick inserted near the center comes out clean. Cool in the pan on a wire rack for 10 minutes. Remove from the pan; cool completely on a wire rack. Wrap and store overnight before slicing. Makes 1 loaf (16 servings).
