Cinnamon Apple Coffeecake Recipe

Ingredients

  • Cake Batter:
  • 3/4 C. firmly packed brown sugar
  • 1/2 C. butter
  • 3 eggs
  • 3 C. all-purpose flour
  • 3 tsp. Clabber Girl® Baking Powder
  • 1/2 tsp. salt
  • 1/2 tsp. apple pie spice
  • 1 C. buttermilk
  • 1 tsp. Spice Islands® Pure Vanilla Extract
  • Cinnamon-crumb mixture:
  • 1 C. firmly packed brown sugar
  • 1/2 C. chopped pecans
  • 1/4 C. all-purpose flour
  • 1 tsp. Spice Islands® Ground Saigon Cinnamon
  • 1/4 C. butter
  • 1 C. Granny Smith apples, chopped

Directions

  1. Preheat oven to 350°F. Grease and flour a tube pan or bundt pan.
  2. Cake: Cream together sugar and butter. Add eggs one at a time, blending well after each addition. In a separate bowl, combine flour, baking powder, salt and apple pie spice; blend well and add to butter mixture alternately with buttermilk. Stir in vanilla. Batter will be thick.
  3. Cinnamon Crumb Mixture: combine sugar, pecans, flour and cinnamon. Cut in butter until mixture is crumbly; stir in chopped apples.
  4. To bake: Pour 1/2 of the cake batter into the prepared pan; pour 1/2 of the crumb mixture on top. Top with remaining cake batter followed by the balance of the crumb mixture.
  5. Bake at 350 F for 60 minutes, until cake tests done. Cool 5 minutes in pan, then cool on a wire rack before serving.
