Chocolate Mint Brownies

Ingredients

  • 1 C. Crisco® Pure Vegetable Oil
  • 1 C. white sugar
  • 1 C. brown sugar, packed
  • 3 eggs
  • 2 tsp. Spice Islands® Pure Vanilla Extract
  • 3/4 C. cocoa powder,
  • 1 C. all-purpose flour
  • 1/4 tsp. salt
  • 1/4 tsp. Clabber Girl® Baking Soda
  • 1/4 tsp. Clabber Girl® Baking Powder
  • 1 C. chopped chocolate mint candies
  • 1 C. chopped walnuts or a mix of nuts and chocolate chips, all optional

Frosting:

  • 2-3 C. powdered sugar
  • 1/2 C. softened butter
  • 3-6 Tbsp. warm water, as needed

Directions

  1. Preheat oven to 350°F. Line an 8 x 10-inch brownie pan with parchment paper and spray sides with non-stick cooking spray like Baker’s Joy®.
  2. In a large bowl, blend butter, sugar, eggs, and vanilla. Fold in cocoa and blend well, and then remaining ingredients to make a thick batter. Fold in walnuts and chocolate mint candies. Spoon into pan. Place on a baking sheet and bake 25-28 minutes until just set.
    Cool well.
  3. For the frosting, blend confectioner’s sugar, butter or margarine and warm water on slow speed of mixer until things are combined. Increase speed, and add water, as required, to make a soft frosting. Spread it on brownies. Decorate with additional mint candies or a mixture of nuts and chocolate chips.
