Ingredients

Cupcakes

  • 1 3/4 C. all-purpose flour
  • 1 1/4 C. sugar
  • 1 Tbsp. Clabber Girl® Baking Powder
  • 1/2 tsp. salt
  • 1/2 C. Crisco® All-Vegetable Shortening, softened
  • 3/4 C. mashed ripe bananas (about 2 medium)
  • 1/3 C. evaporated milk
  • 2 tsp. Spice Islands® Pure Vanilla Extract
  • 2 eggs
  • 6 oz semisweet chocolate chips

Banana Frosting 

  • 1/4 C. margarine, softened
  • 2 Tbsp. evaporated milk
  • 1 tsp. banana flavoring
  • 2 C. powdered sugar

Garnish 

  • 1/2 C. chocolate chips

Directions

For Cupcakes

  1. Preheat oven to 375 F. Line muffin tin with cupcake papers.
  2. In a large bowl, sift together flour, sugar, baking powder and salt. Add shortening, bananas, evaporated milk, vanilla, and eggs all at once. Beat on medium until blended, then beat 3 minutes longer. Stir in chocolate chips.
  3. Pour batter into prepared muffin cups, filling about 3/4 full.
  4. Bake 20 minutes or until a toothpick inserted in center comes out clean. Remove from pan. Cool on wire rack.

For Banana Frosting 

  1. In a small bowl, combine margarine, evaporated milk, and banana flavoring. Add powdered sugar, 1 C. at a time, mixing until smooth after each addition. Mix until frosting is smooth and shiny. If consistency is too thick, add a few drops of evaporated milk.
  2. Frost cupcakes and sprinkle with chocolate chips
