Cherries Jubilee

Ingredients

  • 1 C. unsweetened cherry juice blend
  • 1/4 C. sugar
  • 2 Tbsp. Clabber Girl® Corn Starch
  • 1 tsp. Spice Islands® Ground Saigon Cinnamon
  • 1/2 tsp. Spice Islands® Lemon Peel
  • 4 C. frozen dark sweet cherries (unsweetened, thawed)
  • 1/2 tsp. Spice Islands® Pure Almond Extract
  • 1/3 C. amaretto liqueur
  • vanilla ice cream

Directions

  1. Mix juice, sugar, corn starch, cinnamon and lemon peel in a large skillet.
  2. Bring to a boil, stirring constantly.
  3. Reduce heat.
  4. Simmer 2 to 3 minutes or until thickened.
  5. Remove from heat, stir in cherries and almond extract.
  6. Heat amaretto in a small, long handled pan just until warm.
  7. Ignite with a long match; pour over cherry mixture.
  8. Stir gently until flame dies down.
  9. Spoon cherry mixture over individual bowls of ice cream.
  10. Serve immediately.
