Ingredients

Cake

  • ¾ C. unsalted butter
  • 3 ½ C. all-purpose flour
  • 1 C. light brown sugar
  • 1 C. granulated sugar
  • 1 Tbsp. Clabber Girl® Baking Powder
  • 1 tsp. Clabber Girl® Baking Soda
  • 2 tsp. salt
  • 2 ½ C. whole buttermilk
  • 4 eggs
  • 2 tsp. Spice Islands® Pure Vanilla Extract
  • 2 Tbsp. Crisco® Refined Organic Coconut Oil, melted

Glaze

  • 1/3 C. unsalted butter
  • ½ C. brown sugar
  • 1 ½ Tbsp. Spice Islands® Pure Vanilla Extract
  • 1 ½ Tbsp. water
  • powdered sugar (optional)

Directions

  1. Preheat oven to 350°F and coat a Bundt pan with Baker’s Joy® Nonstick Baking Spray with Flour; set aside.
  2. In a small saucepan, heat butter over low heat, stirring frequently, until it gets foamy, turns an amber color and brown bits start to form on the bottom of the pan (about 8-10 minutes). Remove from heat immediately and pour into a heat proof container; set aside.
  3. In a large bowl, whisk together the flour, sugars, baking powder, baking soda and salt; set aside.
  4. In another bowl, whisk together the buttermilk, eggs and vanilla until well blended.
  5. Pour the buttermilk mixture into the flour mixture and gently mix until a batter is formed.
  6. Add the browned butter and the oil and mix until incorporated.
  7. Pour into prepared pan and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool on a wire rack for 15-20 minutes then invert onto a serving platter.
  9. While cake is cooling in the pan, prepare the glaze.
  10. Add the butter to a saucepan and brown using the method that was used for the cake.
  11. Once brown, add the brown sugar and stir to start dissolving the sugar.
  12. Add the vanilla and water. Stir and continue to cook over low heat until the sugar is dissolved.
  13. After placing the cake on a serving platter, poke lots of hole in it using a grilling skewer or similar sized item.
  14. Pour brown sugar mixture slowly over the cake, covering the entire cake. Allow to soak in as the cake cools.
  15. Dust with powdered sugar if desired and serve after glaze is absorbed.
