Apple Cider Cookies-2

Ingredients

Cookies

  • 1 ½ C. all-purpose flour
  • 1 tsp. Clabber Girl® Baking Soda
  • 1 tsp. Spice Islands® Ground Saigon Cinnamon
  • ½ tsp. salt
  • 2 ¾ C. rolled oats
  • 1 C. unsalted butter, softened
  • ¾ C. brown sugar
  • 4 pkts. (0.74 oz. each) Instant Apple Cider Mix
  • 2 eggs
  • 1 tsp. Spice Islands® Pure Vanilla Extract

Glaze

  • 2 pkts. (0.74 oz. each) Instant Apple Cider Mix
  • ¼ C. hot water
  • 2 C. powdered sugar, sifted

Directions

  1. Preheat oven to 350°F
  2. In a large bowl, whisk together the flour, soda, cinnamon, salt, and oats; set aside.
  3. In a stand mixer or with an electric hand mixer, cream together the butter, brown sugar, and apple cider mix.
  4. Mix until smooth and creamy, about 2-3 minutes on high speed; scrape the sides of the bowl as needed.
  5. On medium speed, add the eggs and vanilla and beat until well blended, scraping the sides of the bowl as needed.
  6. On low speed, add the flour mixture and blend just until combined.
  7. Scoop cookies out onto a parchment lined baking sheet with a 1-2 oz. portion scoop; press each cookie gently with the palm of your hand to slightly flatten.
  8. Bake for 12-15 minutes or until the edges start to brown.
  9. Allow to cool on a wire rack.

 

For Glaze

  1. Dissolve the apple cider mix in the hot water.
  2. Add the powdered sugar and stir until smooth.
  3. Pour a tablespoon of glaze on top of each cookie.
