Vanilla Mug Cake

An egg-less “Birthday Cake” flavored mug cake

Ingredients

  • 2 Tbsp. Crisco® Pure Vegetable Oil or Canola Oil
  • 2 Tbsp. granulated sugar (or other granulated sweetener)
  • 1 tsp. Spice Islands® Pure Vanilla Extract
  • 1/4 C. all-purpose flour (or paleo flour blend)
  • 1/2 tsp. Clabber Girl® Baking Powder
  • 1/8 tsp. salt
  • 3 Tbsp. seltzer water
  • 2 Tbsp. white chocolate chips
  • sprinkles for decorating, optional

Directions

  1. In a 12 oz. (or larger) microwavable coffee mug, blend together the oil, sugar, vanilla, flour, baking powder, and salt.
  2. Slowly add the seltzer water (it will fizz) and stir to combine.
  3. Stir in the white chocolate chips.
  4. Microwave on full power for 1 1/2 – 2 minutes.
  5. Carefully remove from the microwave and allow to cool for 1 minute. Garnish with sprinkles if desired.
