Fried Pumpkin Donuts

Ingredients

  • 1/4 C. melted butter
  • 1 C. granulated sugar
  • 1 C. prepared canned pumpkin
  • 2 lg. eggs, beaten
  • 1/2 C. brown sugar
  • 4 C. all-purpose flour, sifted
  • 5 tsp. Clabber Girl® Baking Powder
  • 1 tsp. salt
  • 1 tsp. Spice Islands® Ground Nutmeg
  • 1/2 tsp. Spice Islands® Ground Ginger
  • 1 tsp. Spice Islands® Ground Cinnamon
  • 1/2 C. milk
  • Crisco® Pure Vegetable Oil, for frying

Cinnamon sugar (to sprinkle on finished donuts)

  • ¾ tsp. Spice Islands® Ground Saigon Cinnamon
  • 1 Tbsp. sugar

For the Glaze:

  • 2 C. powdered sugar
  • 2-4 Tbsp. milk
  • 1/2 tsp. Spice Islands® Pure Vanilla Extract

Directions

  1. Cream together butter and sugars; add pumpkin and beaten eggs; set aside.
  2. In a separate bowl, combine dry ingredients including spices.
  3. Add to creamed mixture alternately with milk, and mix until combined.
  4. Chill dough for at least 2 hours. Roll out dough to about a 1/2 inch thickness.
  5. Cut with doughnut cutter, and fry in oil for about 1 minute on each side.
  6. Drain on paper towels, transfer to platter and drizzle with glaze or sprinkle with cinnamon sugar.
  7. To make glaze, whisk together the powdered sugar, 2 Tbsp. milk, and vanilla extract.
  8. Add more milk until desired consistency is reached. Drizzle over doughnuts.
