Pizza Fluffins

Ingredients

2 C. all-purpose flour

2 Tbsp. sugar

1 Tbsp. Clabber Girl® Baking Powder

2 tsp. Spice Island® Garlic Powder

1 ½ tsp. Spice Island® Oregano

½ tsp. salt

¾ C. finely chopped OR mini pepperoni

¼ C. finely chopped green bell pepper

¼ C. finely chopped red onion

1 ½ C. shredded mozzarella cheese

1 ½ Tbsp. Crisco® Pure Vegetable Oil

1 C. buttermilk

Pizza sauce for dipping (optional)

Directions

  1. Preheat oven to 375° F
  2. In a medium bowl, whisk together the flour, sugar, baking powder, garlic powder, oregano, and salt
  3. Stir in the pepperoni, bell pepper, onion, and mozzarella cheese
  4. Add the oil and buttermilk and stir with a rubber spatula or wooden spoon until a dough is formed
  5. Coat a regular sized muffin pan with Bakers Joy®
  6. Using a scoop or two spoons, portion dough into the pan
  7. Bake 12-15 minutes or until browned
  8. Let cool on a wire rack for 2 minutes then remove from pan
  9. Serve warm with pizza sauce for dipping
  10. Refrigerate any leftovers
