Ingredients
For the Dough:
- 1 C. white whole wheat flour or whole wheat pastry flour
- 1 1/2 C. unbleached all-purpose flour
- 2 tsp. Clabber Girl® Baking Powder
- 1/2 tsp. salt
- 8 Tbsp. unsalted butter, at room temperature
- 1/2 C. light brown sugar, packed
- 3 large eggs
- 1 tsp. Spice Islands® Pure Vanilla Extract
- 2 Tbsp. peeled and shredded fresh ginger (use a box grater)
For the Pineapple Filling:
- 1/3 C. light brown sugar, packed
- 1 Tbsp. unbleached all-purpose flour
- Grated zest of 1 lemon
- 1/4 pineapple, peeled, cored and diced in 1/2 inch chunks, about 2 cups
- 3/4 C. roasted, salted macadamia nuts
- Granulated sugar, for glazing the turnovers
