Loaded Cookie Bars Recipe

Ingredients

  • 1 C. unsalted butter, softened
  • 1 C. granulated sugar
  • 3/4 C. brown sugar
  • 2 Tbsp. caramel sauce
  • 1 egg
  • 1/2 tsp. Spice Islands® Pure Vanilla Extract
  • 1 2/3 C. all-purpose flour
  • 1/2 tsp. Clabber Girl® Baking Powder
  • 1/4 tsp. Clabber Girl® Baking Soda
  • 1 1/2 tsp. coarse salt (cut in half if using table salt)
  • 1 C. semi-sweet chocolate chips
  • 3/4 C. graham cracker crumbs
  • 1/2 C. rolled oats
  • 5 tsp. coarse ground coffee
  • 1 C. mini pretzels
  • 1 1/2 C. mini marshmallows

Directions

  1. Preheat oven to 350°F.
  2. Spray a 9×13 pan (or two 8×8 or 9×9) with Baker’s Joy No Stick Spray and then line with parchment paper in both directions so that paper hangs over the edges.
  3. In a mixing bowl, cream together the butter, granulated sugar, brown sugar and caramel sauce on med-high speed until well blended, about 3 minutes. Scrape the sides of the bowl and the paddle.
  4. Add the egg and vanilla and mix on med-high speed for 5 minutes, scraping the bowl once during the mixing. The mixture should be very fluffy at this point.
  5. On low speed, add in the flour, baking powder, baking soda, and salt and mix until incorporated.
  6. Add the chocolate chips, graham crumbs, oats and coffee and mix until blended.
  7. Add the pretzels and marshmallows and mix for 15-30 seconds.
  8. Scape the sides of bottom of the bowl to make sure everything is mixed.
  9. Press dough into prepared pan. Top with additional chocolate chips and/or pretzels for better presentation, if desired.
  10. Bake for 22-26 minutes or until the edges begin to brown. Do not overbake.
  11. Remove from the oven and allow to cool for about an hour before cutting.
