Gingered Gingerbread Recipe

Ingredients

  • 2 C. all-purpose flour
  • 1 Tbsp. Spice Islands® Ground Ginger
  • 1 tsp. Clabber Girl Baking Soda
  • 1 tsp. Spice Islands® Ground Saigon Cinnamon
  • ½ tsp. salt
  • ¼ tsp. Spice Islands® Ground Cloves
  • ¾ C. Grandma’s® Molasses
  • ¾ C. milk, heated just to a simmer
  • ½ C. butter, softened
  • ½ C. brown sugar
  • 1 egg
  • 1 tsp. lemon zest
  • ¼ C. chopped, Spice Islands® Crystallized Ginger

Glaze (optional)

  • 2 C. powdered sugar, sifted
  • 1 tsp. Spice Islands® Ground Ginger
  • 3 Tbsp. milk
  • Spice Islands® Crystallized Ginger

Directions

  1. Preheat oven to 325°F
  2. Spray a 9X5 loaf pan with Baker’s Joy® Nonstick Spray with Flour; set aside.
  3. In a medium bowl, whisk together the flour, ginger, baking soda, cinnamon, salt, and cloves; set aside.
  4. In a small bowl, whisk together the molasses and warm milk; set aside.
  5. In the bowl of a stand mixer or with a handheld mixer, beat the butter and sugar until fluffy, about 3 minutes. Scrape the sides of the bowl.
  6. Beat in the egg and lemon zest. Scrape the sides of the bowl as needed. Mix until well blended.
  7. On low speed, add the flour alternately with molasses mixture, beginning and ending with the flour.
  8. Stir in crystallized ginger.
  9. Pour into prepared pan and bake for 55 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in pan on a wire rack.

 

Glaze

  1. In a bowl, whisk together all of the ingredients until smooth. Drizzle over cooled loaf.
  2. Garnish with crystallized ginger pieces.
