Dill Batter Bread Recipe

Ingredients

  • 1 envelope yeast, rapid or quick rise
  • 2 C. all-purpose flour
  • 1/4 C. all-purpose flour
  • 1/4 tsp. Clabber Girl® Baking Soda
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 1/2 Tbsp. Spice Islands® Dill Weed
  • 1 tsp. Spice Islands® Onion Powder
  • 1 tsp. Spice Islands® Garlic Powder
  • 2 Tbsp. butter OR margarine
  • 1 C. cottage cheese
  • 1 egg, lightly beaten
  • 1/4 C. very warm water (120 to 130˚F)

Directions

  1. Preheat oven to 350°F.
  2. Mix dry yeast, 1/4 C. flour, baking soda, sugar, salt, dill weed, onion and garlic powders in a large mixing bowl.
  3. Combine butter or margarine and very warm water in a separate small bowl.
  4. Gradually add this to the dry mixture above.
  5. Beat 2 minutes at medium speed, scraping bowl occasionally.
  6. Add the cottage cheese, egg, and 1/2 C. of the flour.
  7. Beat on high speed 2 minutes.
  8. Add remaining flour to make a stiff batter.
  9. Cover and let sit 10 minutes.
  10. Transfer to a well greased 1-1/2 quart casserole.
  11. Cover and let rise in a warm, draft-free area about 45 minutes or until doubled in bulk.
  12. Bake in a preheated oven at 350˚F for 35 to 40 minutes or until golden.
  13. Immediately remove bread from casserole.
  14. Serve warm, or place on wire rack to cool.
  15. If desired, after baking brush with melted butter and a sprinkling of salt.
