Corn Biscuit Recipe

BBQ-Ham-on-a-Biscuit

BBQ-Ham-on-a-Biscuit

Ingredients

Biscuits:

  • 1 1/2 C. all-purpose flour
  • 1/2 C. yellow cornmeal
  • 1 Tbsp. Clabber Girl® Baking Powder
  • 2 tsp. sugar
  • 1/4 to 1/2 tsp. salt
  • 1/2 C. cold butter
  • 1/2 C. cheddar cheese, shredded
  • 1 C. milk

Sandwich Filling:

  • 1 C. homemade or your favorite bottled barbecue sauce
  • 4 C. chopped or pulled cooked ham
  • 1/4 C. chow chow relish
  • 1/2 C. red onions, thinly sliced or chopped

Directions

Preheat oven to 450° F.

Biscuits:

In a large bowl, combine flour, cornmeal, baking powder, sugar and salt. Cut in butter until mixture is crumbly. Stir in cheese and milk just until moistened. Drop by 1/4 C. 2-inches apart onto an ungreased baking sheet. bake at 450° F. for 12-15 minutes or until light golden brown. Move biscuits to work area to make sandwiches.

Filling:

In a medium heavy saucepan or skillet, mix barbecue sauce and ham. Bring to high simmer over medium-high heat; cover and reduce heat to medium or low; simmer 20 minutes, stirring occasionally until ham is sticky and browned. To assemble sandwiches; split open biscuits. Place approximately 1/3 C. of barbecue ham on bottom biscuit halves. Garnish with chow chow and red onions. Close with top half of biscuit.
