Christina Tosi’s Cereal Marshmallow Cookies

Ingredients

  • 2 sticks butter
  • 1 ½ C. sugar
  • 1 egg
  • ½ tsp. Spice Islands® Pure Vanilla Extract
  • 2 ¼ C. flour
  • 2 tsp. Spice Islands® Cream of Tartar
  • 1 tsp. salt
  • ½ tsp. Clabber Girl® Baking Powder
  • ¼ tsp. Clabber Girl® Baking soda
  • 1 ½ C. your favorite cereal
  • 1 C. mini marshmallows

Directions

  1. Heat the oven to 350°F.
  2. Combine the butter and sugar in a large bowl and mix until smooth. Add the egg and vanilla extract and mix until well combined.
  3. Add flour, cream of tartar, salt, baking powder and baking soda, mixing until just combined. Add the cereal and marshmallows and mix until incorporated.
  4. Scoop 2 to 3” apart on a greased baking sheet, pat down tops and bake at 350°F for 10 minutes until golden brown on the edges and still fudgy in the center.
  5. Cool completely before digging in or storing in an airtight container.
