Chocolate Marbled Waffles Recipe

Ingredients

Waffle Batter:

  • 1 ½ C. all-purpose flour
  • ½ C. Clabber Girl Cornstarch
  • 1 tsp. Clabber Girl Baking Powder
  • 1 tsp. salt
  • ¾ tsp. Clabber Girl Baking Soda
  • 1 ¾ C. buttermilk
  • 3 eggs, separated
  • ½ tsp. Spice Islands Pure Vanilla Extract
  • 3 Tbsp. granulated sugar
  • ½ C. (1 stick) unsalted butter, melted
  • 2 C. chocolate chips, melted, divided

Chocolate Syrup

  • ⅓ C. water
  • ⅓ C. sugar
  • 1 C. whole milk
  • 1 tsp. maple extract
  • Reserved melted chocolate

Directions

  1. In a microwave safe bowl, or a double boiler, melt the chocolate chips; set aside.
  2. In a large bowl, sift together the flour, cornstarch, baking powder, salt, and baking soda; set aside.
  3. In a small bowl, whisk together the buttermilk, egg yolks, and vanilla; set aside
  4. With an electric mixer and a clean bowl, whip egg whites until soft peaks form.
  5. Add the sugar to the egg whites and whip until stiff peaks form.
  6. Pour buttermilk mixture into the flour mixture and gently blend (there will be lumps).
  7. Add the melted butter and mix to combine.
  8. Fold in the whipped egg whites.
  9. Dollop 3 Tbsp. of the melted chocolate into the waffle batter and slightly swirl with a butterknife.
  10. In a preheated waffle iron, use a measuring cup to pour in the appropriate amount of batter for your iron.
  11. Prepare all the batter; keep waffles warm on a baking sheet in a 200-degree oven while you prepare the syrup.
  12. To make the syrup: in a saucepan, heat water and sugar over medium heat for 2 minutes.
  13. Add milk and bring to a simmer.
  14. Stir in remaining melted chocolate and remove from heat.
  15. Stir until mixture is smooth.
  16. Stir in maple extract.
  17. Serve over waffles.
