Ingredients

  • 1 C. margarine or butter, softened
  • 3/4 C. granulated sugar
  • 3/4 C. brown sugar, firmly packed
  • 1 egg
  • 2 1/2 C. all-purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. Clabber Girl® Baking Powder
  • 1 tsp. Clabber Girl® Baking Soda
  • 12 oz. chocolate chips
  • 1 C. McCann’s® Quick Cooking Rolled Irish Oats
  • 3/4 C. chopped walnuts, optional
  • 2/3 C. caramel topping
  • 1 tsp. Spice Islands® Pure Vanilla Extract (optional)
  • 5 Tbsp. all-purpose flour (for caramel topping)

Directions

    1. Preheat oven to 350° F. Grease a 9-inch square baking pan and set aside.
    2. In large bowl, cream butter or margarine, white sugar, brown sugar and egg. Stir in flour, baking soda, baking powder and salt. Add chocolate chips and oats. Mix well.
    3. Reserve 1/2 cup cookie dough. Place remaining dough mixture in bottom of a greased 9-inch square pan.
    4. Bake at 350° F for 10 minutes or until cookie dough puffs and appears dry.
    5. While the cookie dough is baking, in small bowl, combine 5 tablespoons flour, caramel topping and teaspoon of vanilla; blend well.
    6. Remove crust from oven. Sprinkle with walnuts, drizzle evenly with caramel mixture. Crumble reserved cookie dough mixture over caramel. Return to oven; bake an additional 20 minutes; cool completely before cutting into bars.
