Cherry Coffee Cake Recipe

Ingredients

Cake Batter:

  • 1 stick butter, room temperature
  • 1 C. sugar
  • 2 eggs, room temperature
  • 1/2 tsp. Spice Islands® Pure Vanilla Extract
  • 1 C. sour cream
  • 2 C. all-purpose flour
  • 1-1/2 tsp. Clabber Girl® Baking Powder
  • 1/2 tsp. Clabber Girl® Baking Soda

Filling:

  • 21 oz. canned cherry pie filling

Topping:

  • 2 Tbsp. margarine or butter, softened
  • 1/2 tsp. Spice Islands® Ground Saigon Cinnamon
  • 1/2 C. sugar
  • 1/2 C. chopped walnuts or pecans

Directions

  1. Preheat oven to 350° F.
  2. Beat together butter and sugar. Add eggs, pure vanilla extract and sour cream to batter. Mix until fluffy and light in color.
  3. In a separate bowl combine flour, baking powder and baking soda. Add dry ingredients to batter and gently mix.
  4. Combine the topping ingredients in a separate bowl.
  5. In a greased 9×13-inch baking pan, pour cherry pie filling and spread it out evenly over the bottom.
  6. Pour in the batter and spread it evenly over the cherries. Sprinkle topping mixture over this.
  7. Bake for 35 minutes at 350° F or until cake tests done in the center.
