Caramel Cheesecake Brownies

Ingredients

Brownies 

  • 1 C. unsalted butter
  • 1/2 C. white chocolate chips
  • 1/2 C. semisweet chocolate chips
  • 1 1/2 tsp. Spice Islands® Pure Vanilla Extract
  • 1/4 tsp. Clabber Girl® Baking Powder
  • 1/4 tsp. salt
  • 4 eggs
  • 1 3/4 C. plus 2 Tbsp. all-purpose flour
  • 1 3/4 C. granulated sugar
  • 1 C. semisweet chocolate chips

Cream Cheese Filling 

  • 1/2 tsp. Spice Islands® Pure Vanilla Extract
  • 1 Tbsp. all-purpose flour
  • 1 egg
  • 6 oz cream cheese, softened
  • 1/4 C. sugar

Finishing Touches 

  • 1/2 C. caramel bits OR 3-5 Tbsp. warmed caramel sundae topping
  • 1/2 C. semisweet chocolate, melted

Directions

  1. Preheat oven to 350 F. Line a large baking sheet with parchment paper. Line a 9 or 10 inch springform pan with a circle of parchment paper and spray the interior with non-stick cooking spray like Baker’s Joy® and place on the baking sheet. Set aside.
  2. In 2 quart saucepan, combine the butter and chocolate chips.
  3. Cook over low heat, stirring occasionally, until melted (4 to 6 minutes).
  4. Remove to a medium bowl and stir in all remaining brownie ingredients.
  5. Spoon batter into pan.
  6. For the filling, in a small bowl or food processor, blend all the cream cheese filling ingredients until smooth.
  7. Spread filling over brownie mixture and swirl with a knife.
  8. Bake for 30-35 minutes or until brownies are just set.
  9. Chill an hour or two.
  10. Remove from pan and drizzle on melted chocolate and caramel.
  11. Cut into wedges to serve.
