Banana Bread Mug Cake 2 (2)

Ingredients

  • 1 Tbsp. salted butter
  • 1 oz. cream cheese
  • 1 tsp. Spice Islands® Pure Vanilla Extract
  • 1 egg, lightly beaten
  • 1/2 ripe banana, mashed
  • 2 Tbsp. paleo or gluten free flour blend (can use all-purpose flour)
  • 1 Tbsp. granulated sweetener (such as monk fruit) or 1/2 a ripe banana (can use granulated sugar or brown sugar if desired)
  • 1/2 tsp. Clabber Girl® Baking Powder
  • 1/4 tsp. Spice Islands® Ground Saigon Cinnamon
  • 1 Tbsp. chopped walnuts
  • caramel syrup and walnuts for garnish; optional

Directions

  1. Place the butter and cream cheese in a 12 oz. or larger microwavable coffee mug and microwave on full power for 15-20 seconds.
  2. Remove from microwave and stir.
  3. Add the vanilla, egg, and banana and blend until well combined.
  4. Add in the flour, sweetener, baking powder, and cinnamon and stir until fully blended.
  5. Stir in the walnuts.
  6. Microwave on full power for 1 1/2 – 2 minutes.
  7. Carefully remove from the microwave and allow to cool for 1 minute.
  8. Garnish with caramel sauce and walnuts if desired.
