Game Day Peanut Butter Cookies Recipe

Ingredients

  • 1 C. sugar
  • 1 C. firmly packed light brown sugar
  • 3/4 C. creamy peanut butter
  • 1/2 C. Crisco® All-Vegetable Shortening
  • 2 large eggs
  • 2 Tbsp. milk
  • 1 tsp. Spice Islands® Pure Vanilla Extract
  • 1 C. all-purpose flour
  • 1 tsp. Clabber Girl® Baking Powder
  • 1 tsp. Clabber Girl® Baking Soda
  • 1 1/2 C. McCann’s® Quick Cooking Rolled Irish Oats
  • 1 C. sweetened coconut flakes
  • 1 C. chopped pecans or walnuts

Directions

  1. HEAT oven to 350°F.
  2. BEAT sugar, brown sugar, peanut butter and shortening in large bowl with mixer on medium-high speed until creamy, about 5 minutes. Beat in eggs, milk and vanilla until smooth.
  3. STIR flour, baking powder and baking soda in medium bowl until blended. Stir in oats, coconut and nuts. Add to peanut butter mixture. Beat on low speed until well blended.
  4. DROP dough by rounded tablespoonful, 2 inches apart, onto baking sheets. Bake 10 to 11 minutes or until edges are lightly browned. Cool on baking sheet 2 minutes. Remove to wire rack to cool completely.
