Vegetarian Zucchini Quiche

Ingredients

  • 1/2 C. all-purpose flour
  • 1/4 tsp. Clabber Girl® Baking Powder
  • 5 eggs, beaten
  • 4 C. unpeeled zucchini, grated
  • 8 oz. mozzarella cheese, shredded
  • 1/2 C. Parmesan cheese, shredded
  • 1/2 C. Crisco® Pure Vegetable Oil
  • 1/2 C. onion, chopped

Directions

  1. Preheat oven to 350°F. Pre-bake the crust if it is not already pre-baked.
  2. Sift together flour and baking powder. In a separate bowl, beat eggs well. Stir in all other ingredients and add flour/baking powder mixture; place in pie pan.
  3. Bake for 45 minutes or until golden brown.
  4. Note: if you use a 13 x 9-inch baking pan, bake for 40 minutes or until golden brown.
  5. Yield approximately 6 servings.
